Here is an AIP compliant, coconut free, carob muffin frosting. I’m giving you some proportions but keep in mind that you should modulate those according to your own taste.

  • In a blender combine the sweet potato, carob and maple syrup. Taste and adjust carob and maple syrup according to taste.
  • Frost your muffins with this and voilà!
    Bon appétit !

Notes

  • To save some time, I cooked a large quantity of sweet potatoes for both this frosting recipe and for lunch. I set aside the quantity needed for the frosting, had my lunch and came back to prepare my frosting once the sweet potato had cooled off.
