Sweet potato breakfast bowl in a blue bowl

This sweet potato breakfast bowl will be perfect for those who like a healthy, sweet and filling breakfast. This breakfast bowl is naturally sweet thanks to the fresh and dried fruits contained in it.

    📖 Ingredient notes

    • Sweet potato purée. I recommend using sweet potato purée made with orange sweet potatoes for this recipe. If you need to, please see below how to make sweet potato puree.
    • Lemon juice. You can also use coconut milk if you prefer.
    • Banana. Use fresh banana for this recipe.
    • Blueberries. Use fresh blueberries if in season, frozen if they are not.
    • Raisins or dried cranberries. Choose additive free raisins or dried cranberries to stay compliant.
    • Cinnamon. Ground cinnamon to taste.
    • Optional. Lemon zest to sprinkle on top of your bowl to decorate and give an extra lemony flavor.

    About the sweet potato puree

To make sweet potato puree, you can either :

    • use a steamer (my personal favorite) : peel and slice the sweet potatoes. Put them in your steamer and cook for about 20-25 minutes or until they are soft.
    • use an oven : use a fork to pierce several holes into the sweet potatoes, then place them on a baking dish and cook in the oven for about 1 hour at 400°F (205°C) or until they are soft. Then slice them down the middle and scoop out the flesh, discarding the skin.
    • use a microwave-oven : use the same process as with the oven, then place them on a microwave-oven safe dish and cook for about 10 minutes or until they are soft.

Whichever way you decide to cook your sweet potatoes, once they are cooked and cooled down, just mash them with a fork or a blender.

    💭 Variations

This recipe is pretty versatile. So you can of course modify the fruits used on this recipe according to the season and to what you have on hand. You can also use less fruit if you have to watch your fruit intake.

    🥣 Step by step instructions

    1. In a bowl, mash the sweet potato with a fork and add the lemon juice. Mix until well combined.
    2. Peel and slice the banana. Put the pieces of banana, the raisins (or dried cranberries) and blueberries on top of the mashed sweet potato.
    3. Sprinkle the cinnamon and the optional lemon zest on top of your bowl. Voilà! Your sweet potato breakfast bowl is ready. Bon appétit !
