    Sweet potato breakfast bowl (AIP, paleo, vegan)

    Sweet potato breakfast bowl in a blue bowl

    This sweet potato breakfast bowl will be perfect for those who like a healthy, sweet and filling breakfast.

    sweet potato purée with golden raisins, blueberries and a sliced banana spinkled with lemon zest and cinnamon

    This breakfast bowl is naturally sweet thanks to the fresh and dried fruits contained in it.

    Ingredients

    • sweet potato purée (see below to know how to make it)
    • lemon juice (or coconut milk if you don't like lemon juice and can tolerate coconut)
    • banana
    • blueberries (fresh if in season or frozen)
    • raisins or dried cranberries : choose additive free raisins or dried cranberries to stay compliant
    • Pinch of cinnamon
    • optional : lemon zest to sprinkle on top of your bowl to decorate

    This recipe is pretty versatile. So you can of course modify the fruits used on this recipe according to the season and to what you have on hand. You can also use less fruit if you have to watch your fruit intake.

    About the sweet potato puree

    First of all, I use orange sweet potatoes as they are the easiest ones I can find here in Paris.

    Then, to make this recipe easier, I prepare a big batch of orange sweet potato puree that I will use for different recipes.

    And to make sweet potato puree, you can either :

    • use a steamer (my personal favorite) : peel and slice the sweet potatoes. Put them in your steamer and cook for about 20-25 minutes or until they are soft.
    • use an oven : use a fork to pierce several holes into the sweet potatoes, then place them on a baking dish and cook in the oven for about 1 hour at 400°F (205°C) or until they are soft. Then slice them down the middle and scoop out the flesh, discarding the skin.
    • use a microwave-oven : use the same process as with the oven, then place them on a microwave-oven safe dish and cook for about 10 minutes or until they are soft.

    Whichever way you decide to cook your sweet potatoes, once they are cooked and cooled down, just add them to your blender with the other ingredients of this recipe.

    How to make this

    1. In a bowl, mash the sweet potato with a fork and add the lemon juice. Mix until well combined.
    2. Peel and slice the banana. Put the pieces of banana, the raisins (or dried cranberries) and blueberries on top of the mashed sweet potato.
    3. Sprinkle the cinnamon and the optional lemon zest on top of your bowl. Voilà! Your sweet potato breakfast bowl is ready. Bon appétit !

    Ingredients
     
     

    • 230 g sweet potato puree
    • 2 tablespoon lemon juice
    • 1 banana (or only half a banana, according to your appetite)
    • 1 handful blueberries (fresh or frozen)
    • 1 handful raisins or dried cranberries
    • Pinch of cinnamon

    Optional :

    • 1 tablespoon lemon zest

    Instructions
     

    • In a bowl, mix the sweet potato puree with the lemon juice until well combined.
    • Peel and slice the banana. Put the pieces of banana, the raisins (or dried cranberries) and blueberries on top of the mashed sweet potato.
    • Sprinkle the cinnamon and the optional lemon zest on top of your bowl. Voilà! It's ready.
