Mini vanilla mug cake

Although I know that microwave ovens are very controversial when it comes to their impact on our health, they are very convenient to use and I still haven’t ditch mine for now. So here is a mug cake recipe perfect for a quick snack or craving for adults or for kids as it is ready in 5 minutes, cooking time included!

Ingredients

  • 1 Tbsp non dairy yogurt

  • 2 Tbsp whole rice flour

  • 1 Tbsp almond flour

  • 1 Tbsp maple syrup

  • 1/2 tsp gluten-free baking powder

  • 1/2 tsp vanilla extract

  • a little pinch of salt

Instructions

  • Add yogurt, maple syrup and vanilla extract to a mug. Mix the ingrédients with a fork.
  • Add all the other ingredients. Whisk the mixture with your fork until well combined.
  • Put your mug in the microwave oven and cook it for 30 seconds to 1 minute. Voilà! It’s ready! Serve immediately. (You can add a little bit of cacao powder on top of your mug cake to decorate it.)
