French Tomato Mustard Tart With Puff Pastry
This classic French Tomato Tart showcases the flavor of fresh tomatoes, herbs de Provence and Dijon mustard with the delicious flakiness of a puff pastry.

- 1 (gluten free) puff pastry store bought or a regular pie crust (you can use my cassava flour pie crust)
- 4 tomatoes
- 150 grams grated cheese of your choice (Emmental, Comté, Ossau-Iraty, Gruyere...)
- 3 Tablespoons Dijon mustard
- 1 Tablespoon herbs de Provence
- 5-10 black olives for garnish
Preheat oven to 410° F (210°C).
Roll out the puff pastry / pie crust in a 10.6 inch (27 cm) pie pan. Prick it with a fork to prevent it from inflating. Pre-bake the tart crust until it's lightly golden (from 5 to 10 minutes).
In the meantime, cut the tomatoes into 3/16 inch (5 mm) slices.
Then, using a spatula, cover the bottom of the crust with a thin layer of Dijon mustard.
Then add the grated cheese on top of the mustard.
Then, layer the tomato slices over the cheese.
Finally, sprinkle the top of the tart with herbs de Provence. And add some black olives for garnish.
Bake the tart until the puff pastry is golden brown and the tomatoes are soft and tender (15 to 20 minutes). And voilà! Serve warm or at room temperature. Bon appétit!

How to reheat this tart? If you have the time to do so, the best way to reheat this tart is definitely in the oven. Preheat oven to 350°F (180°C) and heat your tart for about 5 to 10 minutes or until hot. Alternatively, this tart can be reheated in a microwave oven in just a few seconds. For that, place your tart on a microwave-safe plate and heat it at high temperature for a few seconds. This is the quickest way to do it but it tends to get the pie crust soggy.
