Mashed sweet potatoes (AIP, paleo, whole30)

Ingredients

  • 1 pound sweet potato 450 g
  • 2 tablespoon coconut milk
  • Pinch of turmeric powder
  • Pinch of sea salt
  • Pinch of black pepper (black pepper is an early reintroduction for AIP diet, omit if you haven't reintroduced it successfully)

Instructions

  • Peel the sweet potato and slice it into pieces. Cook it in a steamer for 20 to 25 minutes or until it is tender.
  • Transfer the sweet potato in a bowl and mash it with a fork. Add the coconut milk, turmeric, salt and pepper and voilà, serve immediately.
