Strawberry mint salad (AIP, paleo, vegan)

Very simple and easy, this strawberry mint salad is deliciously fresh.

  • 1 pound (500 g) fresh strawberries
  • Juice of one lemon
  • 2 tablespoon chopped fresh mint leaves

Optional :

  • 1 tablespoon maple syrup or unrefined sugar (muscovado or coconut sugar)


  • Give the strawberries a rince under cold water. Remove the green parts of the strawberries.
  • Cut the strawberries into pieces and transfer those into a large bowl. Add the lemon juice, chopped mint and unrefined sugar or maple syrup. Mix to combine all the ingredients. To make this fruit salad more beautiful, transfer it into single serving glass container and add a small mint leaf bouquet on top. And voilà!
