Crispy Gingerbread Cut Out Cookies (Paleo, Vegan, AIP)

Ingredients

Tigernut flour Arrowroot Maple syrup Blackstrap Molasses Baking soda Lemon juice Olive oil Vanilla extract Cloves Ginger Cinnamon

In a large bowl, combine all the dry ingredients. In another bowl, combine all the wet ingredients.

Add the wet ingredients to the dry and mix until well combined

Roll out the dough to 3/16 inches (5 mm) between the 2 parchment papers, using a rolling pin. Cutout your cookies

Transfer the cookies to a baking sheet lined with parchment paper.  Once they are cooked, you can decorate them.
