Mashed sweet potatoes with coconut milk

This mashed sweet potatoes with coconut milk recipe is one of my go-tos side dishes. It is very easy to make and kid friendly. Plus, I love the fact that it is kind of an anti-inflammatory recipe thanks to the turmeric used in it.

Ingredients

  • 1 pound (450g) sweet potato

  • 2 Tbsp coconut milk

  • Pinch of turmeric

  • Salt and black pepper to taste (black pepper is an early reintroduction for AIP diet, omit if you haven’t reintroduced it successfully)

Instructions

  • Peel the sweet potato and slice it into pieces. Cook it in a steamer for 20 to 25 minutes or until it is tender.
  • Transfer the sweet potato in a bowl and mash it with a fork. Add the coconut milk, turmeric, salt and pepper and voilà, serve immediately.
