Ce qui est super avec cette recette c'est qu'elle est facile, ne requiert pas beaucoup d'ingr\u00e9dients, ne n\u00e9cessite pas des heures en cuisine et pr\u00e9sente suffisamment bien pour un repas festif. <\/p>\n\n\n\n<p>Alors pour ceux qui me suivent depuis le d\u00e9but de ce blog, vous avez d\u00e9j\u00e0 d\u00fb m'entendre dire que la partie la plus difficile de cette recette a \u00e9t\u00e9 de la faire sortir de la t\u00eate de ma m\u00e8re. \ud83d\ude02<\/p>\n\n\n\n<p>Elle fait tout instinctivement et sans rien mesurer. Alors quand vous lui demandez \"quelle quantit\u00e9 de jus d'orange dois-je mettre?\" Elle vous r\u00e9pond \"eh bien tu verses et puis tu vois\" et vous de lui r\u00e9pondre \"et je suis cens\u00e9e voir quoi???\" \ud83d\ude02<\/p>\n\n\n\n<h2 id=\"%f0%9f%93%96-notes-sur-les-ingredients\"   class=\"wp-block-heading\">\ud83d\udcd6 Notes sur les ingr\u00e9dients <\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>1 filet mignon de porc<\/strong> : celui que j'ai utilis\u00e9 pour cette recette pesait 500g (1.1 livres)<\/li>\n\n\n\n<li><strong>Huile. <\/strong>J'utilise de l'huile d'olive vierge extra mais vous pouvez utiliser une autre huile de votre choix.<\/li>\n\n\n\n<li><strong>Jus d'orange<\/strong> fra\u00eechement press\u00e9 : la quantit\u00e9 peut varier selon la taille de votre cocotte et la taille du filet mignon voir ci-dessous les notes \u00e0 ce sujet.<\/li>\n\n\n\n<li><strong>F\u00e9cule<\/strong>. Si vous ne suivez pas un r\u00e9gime pal\u00e9o ou le protocole AIP, vous pouvez utiliser de la f\u00e9cule de ma\u00efs ou de pommes de terre. Par contre, si vous suivez le <a href=\"https:\/\/gohealthywithbea.com\/fr\/le-regime-aip-quest-ce-que-cest\/\">protocole AIP<\/a> ou un r\u00e9gime pal\u00e9o ou whole30 vous pouvez utiliser de l'arrowroot ou de la f\u00e9cule de tapioca (attention toutefois \u00e0 utiliser de la f\u00e9cule et non des granules ou des perles de tapioca). <\/li>\n\n\n\n<li><strong>Oranges<\/strong>. Prenez des oranges assez fermes, ce sera plus facile de les peler \u00e0 vif. Personnellement, j'utilise une cocotte en fonte (j'en suis compl\u00e8tement fan!) mais vous pouvez utiliser tout type de cocotte. Le jus d'orange ne doit pas bouillir \u00e0 gros bouillons mais juste fr\u00e9mir. A mi-cuisson, retournez le filet mignon (c'est juste pour que les saveurs soient bien r\u00e9parties. Si vous oubliez de le faire, ce ne sera pas la fin du monde. Oui c'est du v\u00e9cu \ud83d\ude05).<\/p>\n\n\n\n<p>Pendant ce temps, \u00e0 l'aide d'un couteau, pelez les oranges \u00e0 vif (comme sur la photo) et coupez-les en rondelles. Ajoutez les rondelles d'oranges dans la cocotte \u00e0 la fin de la cuisson (environ 5 minutes seulement). Si vous les ajoutez d\u00e8s le d\u00e9but, avec la viande, elles vont se dissoudre dans le jus. La viande NE doit PAS \u00eatre rose.<\/p>\n\n\n\n<p>Une fois que la viande est cuite, retirez-la de la cocotte ainsi que les rondelles d'oranges. A l'aide d'une louche, pr\u00e9levez environ 125ml (\u00bd tasse) de jus d'orange. Puis versez-le lentement sur la f\u00e9cule tout en remuant avec un fouet. Une fois que la f\u00e9cule est bien m\u00e9lang\u00e9e au jus d'orange, transf\u00e9rez ce m\u00e9lange au jus d'orange restant (dans la cocotte). M\u00e9langez les 2 jus ensemble dans la cocotte. Cette m\u00e9thode permet d'\u00e9viter les grumeaux, que l'on risque d'avoir en versant directement la f\u00e9cule dans la cocotte.<\/p>\n\n\n\n<p>Versez une partie du jus d'orange sur la viande et mettez le reste dans une sauci\u00e8re. Et voil\u00e0! Et ce, pour qu'il cuise convenablement dans le jus, pour que les saveurs s'impr\u00e8gnent. Donc si votre cocotte est plus grande que la mienne (j'utilise une cocotte de 2,4 L (2,5 qt)) vous devrez ajouter d'avantage de jus d'orange. Et si votre filet mignon est plus petit que le mien, en utilisant la m\u00eame taille de cocotte, vous aurez besoin d'un peu moins de jus d'orange. Votre filet mignon doit \u00eatre partiellement immerg\u00e9 dans le jus: sans pour autant \u00eatre compl\u00e8tement noy\u00e9 dedans (au point o\u00f9 l'on ne voit m\u00eame plus la viande).  <\/p>\n\n\n\n<p>Vous aurez \u00e9ventuellement \u00e9galement besoin d'ajuster la quantit\u00e9 de f\u00e9cule. Par exemple, si vous doublez la quantit\u00e9 de jus d'orange par rapport \u00e0 celle que je mets, vous devrez \u00e9galement doubler la quantit\u00e9 de f\u00e9cule. Donc si votre cocotte est plus grande que la mienne (j'utilise une cocotte de 2,4 L (2,5 qt)) vous devrez ajouter d'avantage de jus d'orange. Et si votre filet mignon est plus petit que le mien, en utilisant la m\u00eame taille de cocotte, vous aurez besoin d'un peu moins de jus d'orange.
