Ce rago\u00fbt d'agneau mijot\u00e9 avec des l\u00e9gumes comme les carottes, navets et pommes de terre est traditionnellement servi au printemps, notamment pour le repas de P\u00e2ques. Je vous propose ici une version presque \"toute saison\". N'h\u00e9sitez pas \u00e0 servir votre navarin d'agneau avec des l\u00e9gumes printaniers si vous le pr\u00e9parer au printemps. <\/p>\n\n\n\n<p>De mon c\u00f4t\u00e9, \u00e0 l'heure de la r\u00e9daction de cette recette, certes le printemps approche en France m\u00e9tropolitaine mais les l\u00e9gumes primeurs ne sont pas encore sur les \u00e9tals. C'est la raison pour laquelle j'ai d\u00e9cid\u00e9 de servir ce navarin d'agneau avec des haricots verts surgel\u00e9s cultiv\u00e9s localement, bien meilleurs que les haricots verts import\u00e9s de l'autre bout du monde que l'on trouve en ce moment. <\/p>\n\n\n\n<h2 id=\"%f0%9f%94%aa-materiel\"   class=\"wp-block-heading\">\ud83d\udd2a Mat\u00e9riel<\/h2>\n\n\n\n<p>Comme l'indique le titre de la recette, pour faire ce navarin d'agneau, il vous faudra une <a href=\"https:\/\/amzn.to\/4urgcN1\">cocotte en fonte<\/a>. Si vous n'aimez pas les navets, remplacez-les par plus de pommes de terre.<\/li>\n\n\n\n<li><strong>Concentr\u00e9 de tomate.<\/strong> Assurez-vous que le concentr\u00e9 de tomate ne contient aucun additif. Il ne doit \u00eatre compos\u00e9 que d'un seul ingr\u00e9dient: de la tomate. <\/li>\n\n\n\n<li><strong>Pommes de terre.<\/strong> Pour cette recette il vous faudra des pommes de terre \u00e0 chair ferme, type Charlotte. Les pommes de terre sont compatibles avec le programme Whole30 mais ne sont pas consid\u00e9r\u00e9es comme \"pal\u00e9o\". Omettez-les si n\u00e9cessaire. <\/li>\n\n\n\n<li><strong>F\u00e9cule.<\/strong> Elle sert \u00e0 \u00e9paissir la sauce. Vous pouvez utiliser tout type de f\u00e9cule (de ma\u00efs ou de pommes de terre ou de tapioca ou encore de l'arrowroot). Si vous suivez un r\u00e9gime pal\u00e9o, seuls l'arrowroot et la f\u00e9cule de tapioca sont autoris\u00e9s. Si vous suivez le programme Whole30, vous pouvez utiliser toutes les f\u00e9cules mentionn\u00e9es sauf la f\u00e9cule de ma\u00efs.<\/li>\n\n\n\n<li><strong>Haricots verts.<\/strong> Utilisez des haricots verts frais lorsqu'ils sont de saison. Hors saison, privil\u00e9giez des haricots verts surgel\u00e9s issus de cultures locales, souvent plus riches en nutriments que des haricots import\u00e9s de pays lointains. Si vous faites ce navarin d'agneau au printemps, n'h\u00e9sitez pas \u00e0 le servir avec des l\u00e9gumes primeurs typiquement printaniers (petits pois, carottes primeurs).<br><\/li>\n<\/ul>\n\n\n\n<h2 id=\"%f0%9f%a5%a3-pas-a-pas\"   class=\"wp-block-heading\">\ud83e\udd63 Pas \u00e0 pas<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Pr\u00e9chauffez le four \u00e0 180\u00b0 C (360\u00b0 F)<\/li>\n\n\n\n<li>Dans une cocotte en fonte, faites chauffer l'huile d'olive \u00e0 feu vif. Pendant ce temps, si \u00e7a n'a pas d\u00e9j\u00e0 \u00e9t\u00e9 fait par votre boucher, retirez les exc\u00e8s de gras et coupez la viande d'agneau en morceaux de m\u00eame taille. Coupez l'oignon et les carottes en gros d\u00e9s.
