Il donne de l'\u00e9lasticit\u00e9 aux p\u00e2tes et permet au pain de lever en retenant les gaz produits lors de la fermentation. C'est cette propri\u00e9t\u00e9 qui explique sa pr\u00e9sence dans la majorit\u00e9 des produits de boulangerie et de nombreuses pr\u00e9parations industrielles.<\/p>\n\n\n\n<p>La consommation de gluten peut entra\u00eener chez certaines personnes des r\u00e9actions immunitaires.<\/p>\n\n\n\n<h2 id=\"aliments-a-exclure-pour-manger-sans-gluten\"   class=\"wp-block-heading\">Aliments \u00e0 ou en conserves en particulier les plats en sauce<\/li>\n\n\n\n<li>Certains produits sucr\u00e9s&nbsp;(chocolat, barres chocolat\u00e9es, bonbons) <\/li>\n\n\n\n<li>Les fromages fondus \u00e0 tartiner <\/li>\n\n\n\n<li>Entremets<\/li>\n\n\n\n<li>Soupes<\/li>\n\n\n\n<li>Pr\u00e9parations en sauce, marin\u00e9es, etc.<\/li>\n\n\n\n<li>Frites industrielles<\/li>\n\n\n\n<li>Saucisses<\/li>\n\n\n\n<li>Terrines, p\u00e2t\u00e9s<\/li>\n\n\n\n<li>Certaines charcuteries<\/li>\n\n\n\n<li>Certaines viandes hach\u00e9es (type viande \u00e0 hamburger par exemple)<\/li>\n\n\n\n<li>Certains sodas<\/li>\n\n\n\n<li>Chips aromatis\u00e9es et autres produits pour l'ap\u00e9ritif<\/li>\n\n\n\n<li>Sushis et makis (v\u00e9rifiez que le riz vinaigr\u00e9 n'est pas pr\u00e9par\u00e9 avec du vinaigre de bl\u00e9) <\/li>\n\n\n\n<li>La grande majorit\u00e9 des plats asiatiques que l'on trouve chez les traiteurs Chinois ou dans les rayons asiatiques des supermarch\u00e9s sont pr\u00e9par\u00e9s avec de la sauce soja contenant du gluten ou de la farine de bl\u00e9 <\/li>\n\n\n\n<li>Ol\u00e9agineux enrob\u00e9s<\/li>\n\n\n\n<li>Certains \"laits\" v\u00e9g\u00e9taux industriels<\/li>\n\n\n\n<li>Certains fruits secs (en particulier les figues) et p\u00e2tes de fruit<\/li>\n\n\n\n<li>Certaines tisanes (par exemple la tisane Grand Calme de YogiTea contient du malte d'orge)<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Avoine et gluten<\/h3>\n\n\n\n<p>L'avoine est naturellement sans gluten. Cependant, le probl\u00e8me de l'avoine&nbsp;est sa contamination fr\u00e9quente, lors de sa production, par des c\u00e9r\u00e9ales contenant du gluten. Par cons\u00e9quent, si vous souhaitez consommer de l'avoine, vous devez vous procurer de l'avoine clairement labellis\u00e9 sans gluten c'est-\u00e0-dire sur lequel est appos\u00e9 le logo de l'AFDIAG (voir paragraphe \"produits garantis sans gluten\" pour plus d'informations sur ce logo). Sachez toutefois, que certaines personnes intol\u00e9rantes au gluten ne tol\u00e8rent pas l'avoine, m\u00eame sans gluten. <\/p>\n\n\n\n<h2 id=\"les-aliments-sans-gluten\"   class=\"wp-block-heading\">Les aliments sans gluten<\/h2>\n\n\n\n<p>Manger sans gluten est plus facile qu'il n'y para\u00eet. Voici les aliments sans gluten que vous pouvez consommer:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Les fruits<\/strong> <strong>et l\u00e9gumes frais<\/strong> (y compris les pommes de terre et les patates douces) non cuisin\u00e9s, achet\u00e9s bruts.<\/li>\n\n\n\n<li><strong>La viande <\/strong>(attention toutefois aux viandes hach\u00e9es et \u00e0 la charcuterie)<\/li>\n\n\n\n<li><strong>Le poisson et les fruits de mer<\/strong><\/li>\n\n\n\n<li><strong>Produits laitiers<\/strong> : beurre, yaourt, fromage blanc, lait, fromages affin\u00e9s traditionnels (camembert, comt\u00e9, etc.). <\/li>\n\n\n\n<li><strong>C\u00e9r\u00e9ales et pseudo-c\u00e9r\u00e9ales<\/strong> <strong>sans gluten<\/strong> (voir liste ci-dessous)<\/li>\n\n\n\n<li><strong>L\u00e9gumineuses<\/strong> sous forme brute. <\/li>\n\n\n\n<li><strong>Oeufs<\/strong><\/li>\n\n\n\n<li><strong>Fruits \u00e0 coque<\/strong><\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">C\u00e9r\u00e9ales et pseudo-c\u00e9r\u00e9ales sans gluten<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Riz<\/li>\n\n\n\n<li>Quinoa<\/li>\n\n\n\n<li>Sarrasin (\u00e9galement appel\u00e9 bl\u00e9 noir)<\/li>\n\n\n\n<li>Ma\u00efs<\/li>\n\n\n\n<li>Millet<\/li>\n\n\n\n<li>Sorgho<\/li>\n\n\n\n<li>Tapioca \/ Manioc<\/li>\n\n\n\n<li>Amarante<\/li>\n\n\n\n<li>Soja<\/li>\n\n\n\n<li>Teff<\/li>\n\n\n\n<li>Arrowroot<\/li>\n\n\n\n<li>Fonio<\/li>\n<\/ul>\n\n\n\n<p>Ces listes ne sont pas exhaustives. Elles visent \u00e0 vous donner les bases de connaissances pour vous y retrouver pour pouvoir manger sans gluten. Cela ne doit en aucun cas vous dispenser de v\u00e9rifier par vous m\u00eame la liste des ingr\u00e9dients. D'autant plus que la composition des aliments pr\u00e9par\u00e9s varie avec le temps. Certains aliments peuvent \u00e0 un moment donn\u00e9 ne pas contenir de gluten puis, plus tard, se trouver en contenir. <\/p>\n\n\n\n<p class=\"has-background\" style=\"background-color:#bee3e3\">Il est donc imp\u00e9ratif de syst\u00e9matiquement lire les \u00e9tiquettes.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Produits garantis sans gluten<\/h3>\n\n\n\n<p>Vous pouvez \u00e9galement vous tourner vers les produits garantis sans gluten.
